Local processing involves traditional methods such as hand-picking and same-day pulping, followed by a specific fermentation period and drying technique.
The Ethyl Acetate decaffeination process is employed, effectively removing caffeine while preserving the coffee's natural taste profile. This decaf coffee showcases the specific practices of Tolima's coffee production, providing an authentic Colombian coffee experience.
