The world of coffee is like a pyramid. All of the coffee that Colonna selects and curates sits right up the top of that pyramid. The coffees in this genre are the glint at the very tip of the apex. These coffees are sought after and by their very nature are in short supply.
Finca la Aurora, the farm of the Auromar project, is strongly dedicated to environmental balance, with over half it’s land preserved as pristine highland tropical forest. This stunning coffee is the result of a devotion solely to the curation of Geisha and other SHB coffee varieties in this wonderful space.
A family project from start to finish, the first Natural lots were named Camilina in honour of the owner Robert Brenes’ youngest granddaughter, Camila, and we’re thrilled to return to the farm to present the most recent iteration of this precious crop.
A 3 to 4 week drying process on raised beds sees the cherries laid out in the heat of the day and under the moonlight of clearer nights, resulting in a deeply complex, fruity cup.
Expect notes of fig, papaya and turkish delight.
