With a commitment to quality and sustainability, Maria and her family manage El Chinchin, employing practices such as selective tree pruning and the use of organic fertilisers, including guano from nearby islands, to enrich the soil. After fermentation and washing, the coffee is shade-dried to achieve the desired moisture content, then stored carefully to maintain its integrity until export.
