The coffee undergoes a natural anaerobic fermentation process, which varies depending on weather conditions, typically lasting around 72 hours. Post-fermentation, the cherries are dried in solar dryers for at least 30 days, ensuring optimal moisture levels are achieved. Roiber's diligent approach to quality and his investment in agroforestry techniques are evident in this coffee's unique flavour profile.
