Jardines del Encanto is the sister farm of Jardines del Eden, the origin of our Limited Release Rare 024. Felipe Arcila and his team selected both farms for their exceptional terroir and cool mountain climate. They provide an ideal setting for experimenting with processing methods and rare coffee varieties, including Typica Mejorado, Sidra and SL28.
This coffee is a Maragesha, a naturally occurring hybrid of Gesha and Maragogype. The variety was first identified by Luis Aníbal Calderón at Villa Betulia in Colombia, after he noticed a small number of trees producing distinctly unusual cherries. Its cup profile brings together qualities associated with both parent varieties: the smooth, gentle character and lower acidity of Maragogype, alongside the delicate florality and complexity of Gesha.
After harvesting, the cherries were transported to Cofinet’s La Pradera processing centre. They were floated to remove low-density cherries before undergoing a controlled 30-hour underwater fermentation. The cherries were then pulped and fully washed. Water is reused wherever possible and, once no longer suitable for processing, passes through a series of specialised filtration tanks before being directed into vetiver grass beds for further natural treatment. The coffee was then dried on raised beds in greenhouses for eight days.
