This honey processed Caturra, cultivated at 2,036 MASL, displays a delightful sweetness and a syrupy body, with balance and clarity throughout.
El Pedregal farm, managed by Fidencio Castillo, is located in the San Lorenzo municipality of Nariño, Colombia. Starting with 1,500 coffee trees, Fidencio, alongside his family and neighbours, has expanded the farm to 20,000 trees. The farm benefits from the nearby Juanambú stream and a variety of trees that protect the soil and plants. This lot of Caturra coffee underwent honey processing, with manual harvesting for optimal ripeness, soaking, floating, and an extended fermentation period. The result is a coffee that is clean, balanced, and sweet, perfectly fitting our Foundation genre.
